“Zaatar” in Arabic means “thyme”. But we also use this term to designate a mixture of herbs and traditional spices from the Middle East [Bilad al Sham] whose thyme is of course included in the composition. The thyme we use (“wild thyme”) is different from the variety that we can find in France, its leaves are large and wide (the taste remains almost identical) We dry it and then rub it between his hands to get ground thyme. Zaatar is eaten with (oriental) bread, first dipped in good olive oil and then in a cup of zaatar.
